Hearty Sweet Potato Chili

Warms bones. Strengthens teeth.

One medium sweet potato contains over 400% of your daily vitamin A recommended requirement, 35% of your vitamin C, and a good dose of magnesium – all of which build healthy bones and teeth!

  • 1 lg. onion, chopped
  • 4 cloves garlic, minced
  • 2 tbs olive oil
  • 1 1/2 tbsp chili powder
  • 1 tbsp chili powder
  • 1 tbsp cumin
  • 2 tsp orange zest
  • 1 1/4 lbs sweet potatoes, cubed
  • 28 oz can diced tomatoes
  • 30 oz can black beans (rinsed)
  • 1 cup zucchini, sliced
  • 1 cup water or broth
  • salt and pepper to taste

In a large pot, saute’ onion and garlic in olive oil.  Add all other ingredients and cook, stirring occasionally, until sweet potatoes are tender.  Delish! And great the next day too!
